Vegan Scones!
Adapted from the recipe book I found (by book, I mean loose leaf pages stapled together) from my ninth grade Home Ec class.
Sift together:
1 1/3 cups flour (I used whole wheat)
2 tbsp sugar
4 tsp baking powder
1/2 tsp salt
Cut in 1/3 Earth Balance margarine
Combine: Egg replacer for 1 egg, 1/2 cup non-dairy milk
Mix wet and dry ingredients, then turn dough out onto lightly floured surface and knead 8-10 times. Cut into four wedges and place on slightly greased baking sheets. Bake at 450F for 10-12 minutes. You can add raisins, berries, nuts, or what have you if you like!

Not exactly healthy. But accidentally vegan.
*depends on what country you’re from. some versions have gelatin in them. some don’t.
I have, like, a big thing for peanut butter. Sometimes I dream about it. In my city there’s a natural food store with a grinder where you can just bring in some peanuts and make your own peanut butter. It’s one of my favorite things in the whole world.
